Our recipes fuse traditional flavours with modern ones, so as the hills the hotel stands on, at the cross of the different souls of Umbria. Our specialities include: strangozzi with funghi or tartufo (a kind of large spaghetti with mushrooms or tartuffe), maccheroncini alla norcina (a short pasta with cream and sausages), filetto (fillet) alla spolentina, arista with ginepro (roast beef with juniper).
